chop / potato fritter
Alur chop / potato fritter is a simple delicious snack. Alur
chop / potato fritter is one of the Hot favourite street foods of Bengali and
it will quite appropriate if we call it ‘mother of Bengali telebhaja’. Beguni,
the batter coated deep fried eggplant slices is extremely popular telebhaja
(deep fried goodies) in united Bengal, West Bengal & Bangladesh. Every
single bite into the thin slice of soft eggplant beneath the blanket of crispy
coating explores richness of flavours.
Ingredients of Aloor Chop
2 cups boiled potato
1 and ½ tsp finely sliced onion
2 green chilli finely chopped ( adjust to your
taste)
Roasted & ground cumin & coriander seed 3
to 4 tablespoons
1 tsp fresh coriander leaves finely chopped
Salt to taste
Oil for deep fry
For the Batter:
1 cup b\chick peas flour(besan)
½ egg
1 tbsp rice flour
½ tsp chili powder
1 tsp chat masala
¼ tsp turmeric powder
Baking powder -1/8 teaspoon
Salt to taste

Making The Potato Stuffing
:
Heat 1 tablespoon oil in a pan and fry chopped ginger,
garlic, green chilies for few seconds.
Now add 1/2 teaspoon of turmeric and mix well.
Now add the mashed potato, salt & 3-4
tablespoons roasted & ground cumin & coriander to the pan and make a
mixture of potato.
Now let the mixture cool
Make The batter :
In this mean time make a smooth but thick batter with
besan, rice flour, 1/2 teaspoon turmeric, red chili, little salt, Baking powder
with little water at a time.
Frying The Chops :
When the potato mixture will cool down completely,
make small balls from the mixture and flatten the balls pressing by palm on wax
paper (Easy to remove the chopes from the wax paper).
Take each flatten potato mixture dip in batter and
deep fry till nice golden brown
Serving Tips
Serve hot along with puffed rice or muri.
Notes
You can add chopped & roasted Peanuts to the mixture.
If you do not have any wax paper, then you can use clean plastic also to easy
remove the flatten potato mixture.
