Ingredients
1. 600 g Mutton
2. Asafoetida / hing- 1/2 teaspoon
3. Onion
4. tbsp Coriander paste
5. 1/2 tsp Cumin paste
6. 2 tsp Garlic paste
7. Powder tbsp Ginger paste
8. tsp Poppy seed paste/postodana
9. powder tsp Garam masala
10. Whole garam masala-cinnamon,cardamon, bay
leaf, cloves - as needed
11. tsp Kashmiri red chili powder
12. 3 tbsp Ghee/ Mustard Oil 4 tablespoons
13. Jaiphal(nutmeg), Javetry(mace),
powder or paste - a pinch
14. Tok doi(plain yogurt)/Curd - 2 tablespoon
Preparation:
Clean and wash mutton pieces well. Drain all water. Keep aside.
Directions:
Make a paste of onion, garlic and ginger.
Heat oil/ Ghee in a thick-bottomed pan.
Add asafoetida, cinnamon, cloves and cardamoms.
Sauté till fragrant.
Add the onion and ginger-garlic paste. Stir fry.
Add Mutton pieces and cook on medium heat, stirring constantly till Mutton pieces turn a nice reddish brown color.
This may take twelve to fifteen minutes. Make sure to stir constantly and
scrape all the sediments from the bottom of the pan, so that the meat doesn\'t
get stuck to the bottom of the pan.
Sprinkle a little water and continue cooking for twelve to fifteen
minutes more on low heat.
Add Kashmiri red chilli powder, dry ginger powder,
coriander powder and salt.
Add whipped yogurt and two cups of water.
Cook, covered, till lamb is tender, stirring occasionally.
Slow cook the lamb, checking for the doneness from time to time.
Garnish with cilantro.
Serve hot.
